Bruschetta
Quick and easy vegan recipe for a summer bruschetta. Great as a starter or a canape with friends round for drinks.

Recipe serves 8 portions
Ingredients:
- 4 tomatoes - chopped
- 1/2 red onion – finely chopped
- 1 tsp All Italian blend
- 1 tbsp balsamic vinegar
- 2 tbsp olive oil
- sliced ciabatta or baguette
- 5 fresh basil leaves
Method:
- Finely chop tomatoes and red onion and mix with All Italian blend, balsamic vinegar and olive oil.
- Add a pinch of salt, stir well and leave for least 10 minutes for flavours to combine. Serve on toasted baguette or ciabatta - roughly tear the basil leaves and decorate.
